3 Minute Simple Healthy Breakfast

Would you believe me if I told you that a delicious, simple, and healthy breakfast was just 3 minutes away? Well, it is. I wish I could say this was a "recipe" but, you can alter this to fit your taste any way you choose. So, let's avoid "recipe"... we'll just call it a breakfast "idea". I've been making Greek yogurt and fruit parfaits for breakfast lately. They're quick, simple and most importantly, they're healthy.Simple, Quick, & Healthy Greek yogurt and fruit parfait My parfait starts with 1/2 to 3/4 cup of plain, nonfat Greek yogurt. I use Greek yogurt for so many things. It can be used in a variety of recipes. It's definitely a staple in my refrigerator. By using plain Greek yogurt, I can rest easy knowing that I'm eating a great source of meatless protein, with tons of vitamins, calcium, and potassium. Plus, no added sugar.From there, I start adding the yummy stuff. Usually I throw in a handful of blueberries, and I cut up about 3 or 4 strawberries into bite sized pieces. This is where you can add whatever fruit you like. Raspberries would be delicious! I've even been known to throw in a few chunks of fresh pineapple, too. Talk about yum. (Speaking of strawberries, have you seen Alexis' Strawberry Cake Frappuccino post? To DIE for!) Once the fruit is in the glass mingling with the yogurt, I add the most important part: honey granola pieces. This gives the breakfast a little bit of crunch... plus, the honey flavor just takes it to an entirely different "deliciousness level". I add less than a 1/4 cup of granola. I want to add just enough to add some texture, but not so much that the parfait doubles in calories. Know what I mean? I like to let the parfait sit a couple of minutes. The longer it sits, the more the natural sugars from the fruit seep into the yogurt. Mm-mm!
