My John Collins | Refreshing Cocktail
Heat and humidity has made it to Texas. Yeehaw! As any Texan knows, when the weather gets warmer, the drinks get colder. Today I'm sharing a quick, super simple cocktail recipe for spring and summer - my take on a Tom Collins. I'm calling it a John Collins because, well, I can and my husband's name Is John. I think this is the perfect drink if you're not a fan of beer. This refreshing cocktail will be a hit at your next party.
Refreshing Cocktail Recipe | John Collins
First thing's first. You're going to need some bourbon. Not for the cocktail, but to drink before you add the next ingredient. ;)Most Tom John Collins recipes call for gin - that's what I used. I know some people can't stomach gin, but hear me out. This drink is A+ even with gin. You'll also need a lemon (or two), some ice, and a sparkling water (flavored or not - your choice!). Fill a tall glass halfway with ice. Pour 2 ounces of gin over the top. Using a strainer to catch the pulp (or not... you do you, Boo) while you juice a lemon into the glass. Throw in a teaspoon of simple syrup and then fill up the rest of the glass with sparkling water. Done. Garnish with a lemon slice and beat the heat with a refreshing cocktail for warm weather. PSA - please don't go to the store to buy simple syrup. Make your own. The Pioneer Woman explained it best.
A Little Life Update
We all say it, but...
Life has been so insanely crazy lately. There have been a lot of ups and downs. There is so much unknown for us right now. We're living month to month in our apartment... waiting for the next step. Just waiting on something that will come, but who knows when?
My husband is giving his PhD defense this month. I'm insanely proud of him. He has worked diligently to complete his degree for us and I am forever grateful to him for the sacrifices he's made.
Cross your fingers for us. We could use all the prayers and well-wishes you can muster over the next month or so. Not knowing is scary business! We're open to moving anywhere, as long as the opportunity is right.
