5 Simple Worknight Recipes
It's no secret that I love to bake (here & here). Lately, though I've really been on a cooking spree. Monday I talked about how I've become a little obsessed with a huge fan of Ree Drummond, a.k.a. The Pioneer Woman. I think I'm the last woman on Earth to jump on board that train. I've been making a few of her recipes, but mainly, she just inspires me to COOK.Here are 5 amazingly simple recipes that will make you feel like a real cook (yes, you):#1. Pioneer Woman Pico de GalloI made this on Monday night to go with tacos. I'm a believer. I'm never buying pico at the store ever ever ever again. It was delicious (SO much better than store-bought), and cheap to make at home.#2. Creamy Italian Crockpot ChickenWe've been making this recipe for quite a while. It's probably one of my favorite recipes of all time. The chicken is oh so tender, and the sauce is delectable.Here's how to do it:Get a few chicken breasts (1-6... we typically do 4)Pour in 1 can cream of chicken soup.Pour in 1 8 oz. block of cream cheese (this is the secret ingredient)Pour in 1 Zesty Herb Chicken Marinade packet (or substitute with your favorite dry marinade)Cook on low for 8 hours.(FYI: We put all of these things in a gallon ziplock baggy and freeze for those days that I know I won't want to cook when I get home!)#3. Pioneer Woman Chicken NachosThis was on her most recent show, and let me tell you... I made these last night. Just do it. Super simple and super delicious. Tip: Put the pico de gallo on these!!#4. 10 Minute Mexican Meat PieThis is ridiculously simple. Plus, there are so many ways to customize this recipe. Omit what you don't like, and substitute what you do!#5. Baked Squash/ZucchiniWe all need more veggies in our diets. This is a great (+ easy) way to get 'em in! Here's how:Wash your veggies.Cut the ends off.Slice into chunks.Put veggies in a large bowl.Coat them with a couple tbsp of olive oil, salt, pepper, and other seasonings you like (we use Mrs. Dash original!).Stir 'em up.Pop them in the oven on a jelly roll pan at 400 degrees for 15-20 minutes.
We're all busy. Believe me, I know how it is. The less I have to "work" while cooking, the happier I am after a long day.
